Speciality and artisanal cheeses today: the product and the consumer
This paper aims to identify consumer attitudes towards artisanal cheeses and the reasons behind the growing interest in this sector.
Year of Publication1998
This aim of this study was to identify and describe consumer attitudes towards artisanal cheeses and the reasons behind the growing interest in this sector. The survey results obtained are presented in the context of the concept of an emerging “postmodern” consumerism. Artisanal cheese consumers focus on the unique characteristics of the products rather than price or functional properties and are characterised by “variety seeking” behaviour.
