Challenges are to develop the expertise in the processing sector to maximise opportunities for fifth quarter products and to improve consumer demand for fifth quarter products on the home market. Demand exists in export markets at premium prices. Technologies and expertise exist to allow UK processors to take advantage of export and domestic demand for many products otherwise seen as waste.
